Pickled Beets are a part of our past. Grandma always had a jar handy in the cupboard to dress the table for unexpected guests. When the jar was opened and in the refrigerator it was an irresistible temptation to fork a couple of beets out as a snack. These beets are harvested while still small and young making them very tender and flavorful. They are then finished off by being pickled using Amish recipes and techniques.
